Pronounced “le-CH-ah-na,” this oil is similar to an Arbequina but has more of an olive bite. It’s viscous and very well-balanced, with notes of grass, almond and earth, and leaves you with a hint of a peppery sensation. This and the Cobrançosa from Portugal are among our favorites this season.
