This herbaceous olive oil is made by crushing together both fresh thyme and early, green Koroneiki olives from Greece. This is an excellent finishing oil for poultry dishes and soups, or for roasting lamb. It's also terrific when used to caramelize onions over low heat. Combined with our oregano white balsamic, it makes a delightful Greek vinaigrette.
